Taste
There are flavors that, even before being tasted, pass through the hands, through the smell of the earth, through a gesture repeated for generations. In Umbria, taste often takes the form of warm bread receiving newly pressed oil, the dark scent of truffle released from the soil, the tender fiber of a wild herb gathered along a field.
From Torre del Nera, the territory is discovered this way too, through what is tasted, but above all through what comes before the tasting. Scheggino and the Valnerina guard an ancient relationship with the earth and with its products. Truffle is not only a precious ingredient, oil is not only a seasoning, wine does not merely accompany the table. All these products have a relationship with the place they come from.

In Montefalco, the tour at Montioni leads you into one of the most representative areas of Umbrian taste. The experience begins at 10:30 am and lasts about four hours, with a guided visit through the vineyard, olive grove, winery, and olive mill.
From the hillside, the gaze opens onto the region’s main historic and artistic towns before reaching the tasting. The tasting includes five wines and cold-extracted extra virgin olive oil, followed by a light lunch inspired by the flavors of Umbrian tradition, with local products and simple preparations that enhance seasonal ingredients.
The Strada del Sagrantino crosses the hills of central Umbria and brings together five towns in the province of Perugia: Montefalco, Bevagna, Gualdo Cattaneo, Giano dell’Umbria, and Castel Ritaldi. It is a food and wine itinerary born around Sagrantino di Montefalco DOCG, yet able to tell the story of extra virgin olive oil, medieval villages, and the agricultural landscape as well.
Along the route, you encounter wineries, producers, and historic centers. You can taste dry and passito Sagrantino, Rosso di Montefalco, and Trebbiano Spoletino, or follow one of the 27 official trails dedicated to discovering this part of Umbria.
Gathering wild herbs brings taste back to an ancient gesture: walking, observing, recognizing. There is nothing constructed in this experience. You follow someone who knows the territory and knows how to read in the fields what others would cross without seeing.
Little by little, the way of looking changes. A leaf, a smell, a small plant become clues to a cuisine born from necessity and familiarity with the earth. Wild herbs tell of a domestic wisdom, made of season and memory.
Truffle hunting begins in the silence of the woods. You walk behind the dog and the truffle hunter, waiting for the ground to give a sign. It is an experience made more of attention than movement, because the truffle does not show itself, it is sensed.
When it surfaces, it carries with it something immediate and profound. The scent arrives before any explanation and restores the sense of an ancient bond between Scheggino, the Valnerina, and this product. Searching for it in the woods allows you to understand its value through the gesture of discovery and respect for knowledge handed down through time.
